I’ve been following Lia Huber’s meal planning system for a year – I discovered what was soon to become her Nourish Evolution website in 2012, while looking for hummus recipes. I found myself going back to her site every time I wanted a fast, wholesome and flavorful recipe that featured veggies. Mind you, her recipes are not exclusively vegetarian or vegan. I loved her balanced approach to cooking, so I decided to sign up for her new Cook the Seasons program. Her system took the guess work out of meal planning for the week. I was finally able to plan and cook healthy meals based on a variety of seasonal veggies (while steadily incorporating never-before tried or previously-boring vegetables in my diet – which for me, as an adventurous eater, was especially exciting). Not only that, but I’ve been feeling more energetic and my body was reshaped – I realized how much my diet used to rely on carbs… Quick hint: carbs should only make up a quarter of your plate. Big bummer for pasta lovers like myself, until I discovered how unbelievable scrumptious veggies can be when cooked properly.
I hate food waste, and arguably the best way to reduce it is to plan your meals. If you find yourself throwing away $$ worth of food because you bought it randomly at the supermarket, or you shopped while hungry (we’ve all been there), then this system is for you.
Lia offers professional cooking tips and tricks and sends weekly “meal mappers” with bonus recipes to her subscribers – I always look forward to reading her cheerful newsletters.
